Maredsous Soup

A creamy tomato and Maredsous cheese soup with onions, chicken bouillon and parsley.

Ingredients

  • β€’6 onions
  • β€’1L peeled tomatoes
  • β€’1 box Maredsous double cream cheese
  • β€’3L water
  • β€’4 chicken bouillon cubes
  • β€’Parsley
  • β€’2 tbsp flour, to bind
  • β€’Butter, for frying

Steps

  1. 1Roughly chop the onions.
  2. 2Cook the onions in butter until translucent.
  3. 3Sprinkle the flour over the onions and stir well.
  4. 4Add the chopped tomatoes, tomato juice, cheese, bouillon cubes, water and seasoning.
  5. 5Let simmer for 20 minutes.
  6. 6Blend the soup until smooth.
  7. 7Bring back to a boil.
  8. 8Finish with parsley.
